HISTORY

The story behind Fire'N'Dough..


In 2010, we purchased our first wood fired pizza trailer with double ovens and started our little family business and we called it Woodfire Gold Coast!




We used premade bases and majority of ingredients from a can. It wasn't till 2011, after I had the opportunity to travel briefly to Italy, particularly Venice & Florence, where my passion for all things Italian began, that I decided to honour the authentic style of their national dish and not the western version everyone else was selling and what we were also producing.

Drinking real coffee, eating real gelato and feasting on authentic pizza and antipasto was just a culinary dream come true and an experience I had to document as it was only me in Italy and I had to describe exactly how pizza was meant to be so that we could begin to recreate it back home in Redland Bay so upon return Fire'N'Dough was born. The menu was redesigned our pizzas were made with fresh pizza dough, hand rolled, using authentic Italian sauce with real hand cut fruit and veggies, quality meats and cheeses. As Antonio Carluccio says, "As far as I'm concerned, Italian food doesn't need to be changed, it just needs to be cooked properly with excellent authentic ingredients."

In 2008 a drive to re-educate myself on the basics of cooking from scratch, real un-processed food was ignited after Mr Firendough had a heart attack. With this my mission began my love of Jamie Oliver's style of cooking "real, wholesome fresh food" from scratch served in the centre of the table as a shared experience with the family from preparing to devouring. It was around this time that my desire to have a wood fired pizza business was now more than ever a necessity and had to happen. We had always tinkered with the idea (coming from Melbourne and attending some of the best pizzerias and markets around.) I found this to be lacking in Brisbane, which is what made us decide to take that leap. When I returned from my overseas trip I set about re-branding Fire'N'Dough, new look and new menu along with extra items that were now added and part of our catering choice Canapes & Salads, both additions are done with an Italian flavour and to this day are still hand made using the freshest of ingredients all dressings and sauces are made rom scratch so we know what goes into all our food and we know that its real with no nasty ingredients with numbers.
In 2013 I won a competition and was flown to London to meet Jamie Oliver (this was a dream come true) and I find myself in front of his mobile oven.
On returning the second time to London I was definitely more familiar with my surroundings and more confident in experiencing everything with other like minded people... (unfortunately my first time in London was with 2 other school mums who wanted to find the closest Mc Donalds and sit in hotel watching T.V. ) We ate at pubs, cafes and amazing out of the way eateries (My favourite being Charlotte St in London which I took my family back to in 2018)




The biggest highlight was meeting Jamie oliver and being on set of his Woolworths commercial, we then went to downstairs in "Fifteen" for a degustation which didn't disappoint and had him sign my book which I'd bought 2 years before I visited Fifteen. The food that night was amazing but my attention was on the kitchen, the noise, the flames, the "Yes Chef" and the vibrant way it was able to deliver all the amazing meals on his menu with precision, care and love just as I'd experience 2 years earlier. My Love for all things Jamie Oliver certainly continued.

On return from London Mrs Fire'N'Dough signed up to become Jamie Oliver's "Food Revolution" ambasador for Redland bay. Over the next couple of years our collection of pizza trailers grew with demand of events booking, with more trailers comes more staff and more drivers. All staff have started at the bottom and progressed their way up the Fire'N'Dough ladder with training days and supervisors eager to impart their knowledge to the juniors. As time went on the menu changed and more selection was introduced along with a larger selection of dessert pizzas, a chocolate Fountain, grazing boards and wait staff. Mrs Fire'N'Dough went back and completed her Cert III in commercial cookery along with her Diploma in Hospitality and kitchen management. Still not satisfied with the look of the pizzas we went to Melbourne to a pizzeria to learn and understand a real pizza. The pizza passion was re-ignited and on return to Qld we re trained all our staff to understand an authentic hand stretched pizza, a little challenging to begin with (even for myself) but we persevered and to this day it's the only way we do it. Looking back the old style pizzas we made are nothing on the new way and it excites me every time I watch the dough puff up in 90 seconds under the 400 deg flame licking the roof of the oven.






With this new knowledge of making the best pizzas my desire to return to Italy and gain a better understanding of all things culinary in Italian food now greater than ever and in 2018 the family flew to London first and then onto Italy. Always evolving and educating, trying new recipes but keeping within the authenticity, re- 10 years on, 5 trailers over 20 Fantastic staff a family trip to Italy I think we have managed to perfect an authentic pizza and blessed to have a business that involves everything I love, great food, celebrations and happy people. Eating well means a good life. People naturally gather around a fire, they always have and always will.

Today, the romance of traditional wood fired ovens creates a unique experience in the world of cuisine. The glowing flame and scent of a wood fire elevate the mood and makes the authenticity palpable for an unparalleled culinary experience.

Some questions we often get asked.

Where are you located?

Our base is in the Redlands Business Park, however as we are a mobile business, we service an area approximately 200km radius from our base. We charge a travel fee after the first hour and will quote as required.

Can you cater for large groups?

We have and do cater for larger groups of people. We have catered for 350 people and had them fed in 2 hours. As pizza is such a favoured and fast item to make paired with the hot woodfired oven, we can easily feed a crowd.

Do you do markets or only private catering?

We attend Emerald Lakes markets every Thursday, Currumbin Sanctuary Markets every Friday and Mount Tamborine markets every second Sunday of the month. We do pop up at witches falls wineries and a few other places. Check our social media to see where we are that week.

Do you have a minimum number of guests?

Our minimum spend is 50 guests with any of our menu options. You can have less, however you will be charged the minimum spend.

Do you cater for special dietary requirements?

We like to believe that pizza is a very versatile food that almost everyone can enjoy. We cater for coeliac, dairy intolerance, gluten free, vegan, vegetarian, nut allergy, religious based dietaries, seafood allergies & general topping preferences.

How long does it take you to be ready?

We allow approximately 2 hours to be set up and ready for your nominated food service time.

Will you be able to set up in my backyard?

We can set up anywhere that is well ventilated, has vehicle access on flat ground. Our set up is approximately 3.5m width x 6m length.

Do we pick what pizzas we want?

We cook all the pizzas from your chosen menu until everyone is full. We serve our pizzas onto a large wooden board as a buffet style “help yourself” for your guests to eat as they wish. We also have waitstaff available for hire if you were after a more formal tone for your event.

Do you cater for weddings?

We can cater for any celebrated event in your life from corporate events, baby showers, weddings, birthday parties, hens or bucks’ nights to wakes and funerals.

How do we book?

A non-refundable deposit is required to secure your booking.

When do you need guest numbers, menu choices and final payment?

We contact you approximately 2 weeks before your event to finalise all the details.

What if I want service time to be longer?

We have set durations for every service we offer. If you are wanting either a gap between each service or wanting us to stay longer than stated, you have the option to extend which will charged at an hourly rate. Simply ask our team when enquiring for your event.

How long are the prices on the website valid for?

The prices listed are valid for the current calendar year. Prices for for future years will likley increase and will be reflected in your quote. Existing quotes will be honoured.
